About the Recipe

Feel free to substitute egg whites with whole eggs, but account for the calories

Ingredients

  • 1 cup protein powder

  • 1/2 cup oat fiber

  • 1/2 cup erythritol (or sweetener of choice)

  • 1/4 cup powdered peanut butter

  • 1/4 cup sugar-free chocolate chips

  • 1/2 cup nonfat Greek yogurt

  • 1/4 cup sugar-free maple syrup

  • 1 tsp vanilla extract

  •  2 egg whites

Preparation

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the protein powder, oat fiber, erythritol, powdered peanut butter, and sugar-free chocolate chips.

  3. In a separate bowl, mix together the nonfat Greek yogurt, sugar-free maple syrup, vanilla extract, and egg whites.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

  5. Scoop to portion onto prepared baking sheet

  6. Bake for 10-12 minutes, or until the edges are golden brown.

  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

  8. Enjoy your protein-packed cookies as a nutritious snack or post-workout treat!
