High Protein Chipotle chicken bowl
Ingredients
- 1 lb chicken breast, sliced
- 2 cups cauliflower rice
- 1 can black beans, drained and rinsed
- 1 cup fat-free shredded cheese
- 2 cups shredded lettuce
- 1 small onion, diced
- 1 cup pico de gallo
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Optional toppings: avocado slices, cilantro, lime wedges
Preparation
In a large skillet, heat olive oil over medium heat. Add the sliced chicken breast and season with cumin, chili powder, salt, and pepper. Cook until the chicken is cooked through, about 5-7 minutes.
In a separate skillet, heat a little olive oil and sauté the cauliflower rice until tender, about 5-7 minutes.
Assemble the bowls by dividing the cauliflower rice, black beans, cooked chicken, shredded cheese, lettuce, onion, and pico de gallo among serving bowls.
 Top with optional toppings like avocado slices, cilantro, and a squeeze of lime juice.
